Blanched yellow beans, wax beans look different than the usual green beans but taste remarkably similar. A hearty, healthy & delicious dish, this easy yellow beans recipe w/garlic is a flavorful & tasty, it will please the palates of your guest at any occasion. Recipe: 3 cups yellow green beans 3 cloves of garlic or more if you like 2 Tbsp of oil (your choice) Salt & pepper to your liking Chopped parsley & dill (optional) 1. Roughly chop beans 2. Smash garlic cloves 3. In a pan heat the oil & add half of the garlic & saute a little 4. Add beans & saute 2-3 minutes 5. Add 1 cup of water & since they are blanched - cook till done. 6. Yellow Squash is an easy, health summer veggie side dish. It is a great way to add some color to your plate. It's also packed w/vitamins & minerals like Vitamin C, beta carotene, folate & potassium. Squash Casserole recipe: (that can also be made ahead of time) see below. 3 cups of sliced yellow squash (drain blanched squash) 1/2 cup chopped onion 1/4 cup water, more or less as needed 35 buttery round crachers, crushed 3/4 cup shredded cheddar cheese 2 large eggs, beaten 1/2 cup milk 1/4 melted butter 1 tsp salt Ground black pepper to taste 2 Tbsp Butter Directions: 1. Gather all ingredients 2. Preheat oven to 400 degrees F 3. Place well drained squash & chopped onion in a large dkillet over medium heat; pour in water. Cover, & cook Until squash is tender, 5 minutes or less. Drain well, and place in large bowl. 4. In a medium bowl mix cracker crumb & cheese together. Stir half of the cracker mixture into the cooked squash & onions. 5. Mix eggs & milk together in a small bowl, then add to squash mixture. 6. Stir in 1/4 cup melted butter, & season w/salt & pepper. Spread into the prepared baking dish. Sprinkle w/remaining cracker mixture, & dot w/2 Tbsp butter 7. Bake in preheated oven until lightly browned, about 25 minutes. 8. Serve hot and enjoy You can prep the entire casserole ahead of time & stash it in the refrigerator until your ready to bake it. Simply assemble the casserole (without the cracker crust) then cover it & store it in the refrigerator for up to 24 hours. When you're ready to bake it, take it out of the refrigerator & let it rest at room temperature for about 30 minutes. Then add the buttery cracker crust adn bake. Enjoy. Thank you for your business

RECIPE: Zucchini AuGratin (Keto Scalloped Potatoes) 3 lbs (3-4) slice 1/4 to 1/2 thick, round with the skin left on. Lay the slices on paper towels or towel to get rid of excess water (if you don't they will be soggy) :( Sauce pan - med - high - Add 1 Tbsp. butter - when it is melted add 2 minced garlic cloves, stir well. Add in 1/4 cup heavy whipping cream, 4 oz. cream cheese - stir - 1/4 cup shredded parmesan reggino cheese. Stir well until all the cheese have melted. Add 1 tsp salt, pepper, and onion powder. Layer sliced zucchini long ways in a long 9 x 13 dish. Spread cheese mixture on top then sprinkle 1/2 cup cheddar cheese & 1/2 cup mozzarella cheese on top of the cheddar cheese. 400 degrees 30 - 35 minutes uncovered until golden brown. I LOVE these onions!!! Incredibly sweet and crunchy. Awesome in salsa, on sandwiches, in salads. If Kinston was near Vidalia, GA these would be Vidalia Onions. If you prefer big slicers or smaller salad size let me know. You will receive at least 1 lb. 1lb is 2 med/lg onions or several small.

Simply Saute' or steam. Best not to over cook as it will lose nutrients. Cut up raw and add to smoothies. Lowers blood pressure. Usually there are about 3 leaves per beet. Very high in iron with a higher iron count than spinach as well as vitamin K, B6, magnesium and potassium. They are also a great source of fiber. Thank you.
