Pineapple Drop Cookies

This is one of my grandmother’s recipes my family has enjoyed for decades.
Serves: About two dozen.
1 Cup Sugar
1/2 Cup Vegetable Shortening
1/2 Cup Crushed Pineapple (Drained)
1 teaspoon Baking Powder
1/2 Cup Sweetened Coconut
2 Cups Unbleached Flour
1/2 teaspoon Salt
1 teaspoon Pure Vanilla Extract
1/4 teaspoon Baking Soda
Step by Step Instructions
- Preheat oven to 400 degrees.
- Mix in order given and drop by rounded teaspoons onto cookie sheet.
- Bake about 10 minutes.
