CHARTER SPICE & OIL
Charter Spice and Oil company began with offering the Wiregrass infused Oils and Vinegars in many rich and exotic flavors. (It is the BEST on Market salad greens.) As the business has transitioned to its permanent location in Taj Restaurant, they have also been able to offer high quality seasonings and many healthy food products. Flavored Oils and Vinegars remain the main thrust of the business.
Olives are the oldest cultivated fruit in the world. Olive oil has been used for thousands of years for everything from skin care to an antibiotic. There are many health benefits using Extra Virgin Olive Oil. Studies show it lowers blood cholesterol,  has omega 3’s, lowers blood pressure, contains anti-oxidants, vitamin E, mono and polyunsaturated fats, and more. The olive oil Charter carries is sent to an independent lab as soon as it enters the country. This ensures that the it is extra virgin olive oil and only that.
Balsamic Vinegar has documentation going back to the year of 1046. It was used as gifts to kings and emperors. The grape juice used is unfermented, called “must”, therefore balsamic vinegar in not a wine vinegar. Studies have shown balsamic vinegar can reduce atherosclerosis, and hardening of the arteries, and can normalize blood pressure levels. It keeps you feeling full longer and has anti-oxidants. Some local customers use it to keep blood sugar levels down, something that seems to be common knowledge among health care professionals.

Farm to Table Recipes

MARKET CHILI


1 1/2 cup dried kidney beans (Charter)
1/4 lb sliced bacon cut in 1 inch pieces
1 lb ground beef (Smith Farms & Sandspur)
2-3 carrots, chopped (about 1 cup) (Sandspur)
1 large green bell pepper, cored, seeded and chopped
3 cloves garlic, finely chopped
1 1/2 tablespoon no-salt-added chili powder (Charter)
1/2 tablespoon cumin (Charter)
2 cans no-salt-added diced tomatoes
1/4 teaspoon sea salt


Sort through beans and remove and discard any small stones or debris. In a large bowl, cover beans by 3 inches with cold water, cover and set aside at room temperature for 8 hours or overnight.
Drain soaked beans and transfer to a large pot. Cover by 2 inches with cold water and bring to a boil; skim off and discard any foam on the surface. Reduce heat, cover and simmer, gently stirring occasionally, until beans are tender, 1 to 1 1/2 hours. Drain beans and set aside.
In a large pot over medium-high heat, saute bacon, carrots and onion, garlic & pepper. Carrots should be a bit soft and the onions clear. Remove and set aside. Add ground beef to bacon drippings and brown. Add bacon and veggies, beans, seasonings & tomatoes to the pot with the ground beef and cook about 45 minutes for flavors to blend. Add additional water and adjust seasonings if necessary. Serve with cornbread or corn chips. Optional to garnish with sour cream, shredded cheddar cheese and/or cilantro
