This coming week is special for my family as my dear Mother turns 80. My sisters and I have been planning a big birthday dinner for her many months now, which means I will not be here for next Friday’s pickup on the 17th. Never fear – Superfarmer Viki Richter of Richter farms will be handling order pickup that day. Many of you have met her already and no doubt will enjoy getting to know her a bit better.
It has been brought to my attention that we have a VERY under-utilized section of our Market website – the RECIPES! All total we have about 25 recipes from four people. Can I just put out a challenge for everyone who gets this to consider adding ONE favorite recipe? And if you add two or more, all the better!
Lastly, be sure to check the vendor list for this week. I’ve been practically trembling in anticipation of announcing SIMPLE LIFE Essential Oils. This is a fairly new company specializing in the highest grade therapeutic oils without the name brand prices. 2C Farms has new products listed so don’t miss that. Please note too that SPRING HILL FARMS is returning to their regular bi-weekly schedule starting this week.
Market Info
SANDSPUR FARMS – CSA boxes, Meat Grab Bags, FEED YOUR FAMILY BOX which is designed this box to help cut some of your time standing in line at the grocery store. This box will contain 5 types of vegetables, one for each night of the week, 1 dozen eggs, plus 5 cuts of meat for the week. Serving size is based on a family of four to five.
Farm to Table Recipes
Ingredients
2 pounds small red potatoes, quartered
3 cups fresh or frozen peas
1 cup water
2 tablespoons chopped onion
2 tablespoons butter
3 tablespoons plus 1 teaspoon all-purpose flour
1-1/2 teaspoons salt
1/4 teaspoon pepper
2 cups 2% milk
1 cup half-and-half cream
Optional: cooked, crumbled bacon
1. Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 8-12 minutes or until tender. Drain.
2. Meanwhile, place peas and water in a small saucepan. Bring to a boil. Reduce heat; cover and simmer for 3-5 minutes or until tender. Drain.
3. In a large saucepan, saute onion in butter until tender. Stir in the flour, salt and pepper until blended; gradually add milk and cream. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in potatoes and peas; heat through. Yield: 12 servings.
