WHAT’S DIFFERENT ABOUT M@D?

This week kicks off farmer’s market season, not just in the Wiregrass but pretty much in the whole US of A. While farmer’s markets have been around for many years, they seem to have come into vogue in the last 10 or 15 years becoming a favorite culinary and cultural experience.

What’s not to love? Fresh food is a given, but depending on the size and location other sights, sounds and treats are available. One of my favorite memories, dancing with my little grandson to live bluegrass, happened on opening day of the Memphis Farmer’s Market only four years ago.


Admittedly, M@D is only an open air tent market like that a few times a year. We LOVE setting up in person and interacting with the public, but not doing that as much or as often is one of the things that makes it possible for us to be here for you ALL THE TIME, not just in the summer months.

Another difference is accessibility. Everybody needs healthy nutritious food, but not everybody can even go to a grocery store, let alone walk around outside in the summer heat. Ordering online from the comfort of your home makes it possible for you to get even higher quality of fresh locally grown food.

And since I mentioned QUALITY – all of our vendors with farm produce have been screened to make sure their products line up with M@D’s sustainable standards. It is possible to find sustainably grown foods in traditional farmer’s markets* but that is the exception and not the norm as most growers use traditional methods that include GMO’s, chemical fertilizers, herbicides and pesticides.

We remain committed to our core values of Fresh, Local, Sustainable, and Year Round and are perfectly ok that it means we’ll never be a huge market. We are just proud and happy to offer you the BEST.

HORTONS FARM: Blast From the Past – If you are not a subscriber to the Dothan Nurseries newsletter we highly recommend you do so! We had a bit of fun after last weeks newsletter as JD shared some info with a new herb the Nursery is carrying – a Toothache Plant. The blast from the past part was our blog entry (from 2009!) about the Toothache Trees that grow on our property. It was fun sharing info and while your fearless market manager was on hand Friday I had to check out this new discovery.

I have to tell you – my trees have nothing on this little plant! Just as described, the leaf had an interesting flavor, and just as warned, the little yellow bud made my mouth feel like some kind of cool psychedelic explosion happened in there.

FOUR YEAR ANNIVERSARY

This week marks four years that RESTORATION GARDENS has been with Market at Dothan. Many of you have recently enjoyed their beautiful beets and carrots*. For those of you who may not be familiar with them they were deeply committed to sustainable farming long before moving to the Wiregrass and their mission statement remains the same:

“Hi, we’re glad you’ve visited us! We hope that you have enjoyed the fruits of our land and hands, or may soon have the opportunity to do so. It is our goal and privilege to provide our fellow humanity with completely safe, supremely flavorful, and maximally nutritious food.

Restoration Gardens is a very small, Christian, deep-organic family farm located in Samson, AL. Our family of five work hard together to keep our fledgling enterprise in good progression.

We function with a mission to bring glory to God by restoring the land to health and productivity, and subsequently, the people who depend upon it for life and health. We are so happy to fill our place in this virtuous employment alongside so many other wonderful folks. This is a necessary work that we are thrilled to see a revival of. It’s our belief that human life started with the soil, and that there is an immutable connection between the soil and our society’s health and well being – thus the name Restoration Gardens – connection with God through/and nature is restorative.”

The Dothan Nursery Mother’s Day Event was a great kick-off to our Summer farmer’s markets. It has been a beautiful day filled with beautiful people. Thanks to all.

The bees have found the squash and they are finally getting pollinated. Yay! Yellow squash and zucchini are available this week. Zephyr squash and cucumbers will be here soon.

8 Health Benefits of Carrots & Beets

1. Carrots Are In Fact Great for Your Eyesight: Carrots have a lot of beta-carotene which once it is in the liver converts to Vitamin A. This essential vitamin is used in the retina to help with night vision. Beets also have a high level of beta-carotene too!

2. Carrots & Beets Help to Fight Cancer: Carrots have been shown to reduce the risk of colon, breast, and lung cancer. Beetroot extract has been used to treat cancers of the prostate, breast, and pancreas.  If you are looking for health benefits of carrots and beets, this is more than enough to convince me to keep them in my diet.

3. Prevent Infection and Inflammation: Beets contain betaine which is a nutrient that fights inflammation, increases white blood cell count, which then has a positive impact on inflammation. Carrots have been known to prevent infection for centuries. When shredded raw or boiled and then mashed into mush, it can be used on cuts to heal them.

4. Perfect Combo for a Body Cleanse: The Vitamin A in carrots helps to flush out the liver and reduces fat and bile that has built up. Beets are another great way to rid toxins from the bloodstream and the liver.

5. Natural Energy Source: Beets and carrots are a naturally high source of energy as they both contain high levels of sugar but are low in calories.  For moms that work at home and homeschool like myself, this is one of the top health benefits of carrots and beets that is important.  Anything natural to boost energy in my life is a must.

6. Their Greens Are Awesome Too: The green on the top of both carrots and beets have a lot of iron. Beet tops especially have more iron than even spinach!  Toss the whole thing into your soup or juice blend!  I struggle with anemia, and most often taking supplements doesn’t work well with my system.  Eating meat isn’t always convenient, but I can easily add beets and their greens to various green smoothies.

7. Prevents Strokes and Heart Attacks: Eating just six carrots a week has been credited with lowering your risk for strokes. Foods rich in beta-carotene like beets and carrots lower the risk of heart attacks.

8. Vitamin A Rocks: Both beets and carrots contain high levels of Vitamin A. This vitamin protects the skin, hair, and nails from sun damage and helps them from drying out. Vitamin A also prevents acne, dry skin, and even wrinkling.

We’re very excited to be a part of Dothan Nursery’s Spring Open House. This is the first one since 2019 and unlike prior years, will be held on a Saturday to so guests have the day to visit and enjoy instead of a few hours. Market at Dothan will be back at our usual spot near the Butterfly House and we hope you’ll drop in to meet and get to know some of your Market vendors.

Garlic scapes

Something fun to try! Garlic Scapes are the flower stem of hardneck garlic. They are great to use in place of scallions, with a mild garlic flavor. They will only be available for a few weeks. These scapes are from our Elephant Garlic. The Music Garlic will produce scapes in a few weeks. A quick Google search will yield more recipes than you’ll ever want.

Sugar Snap Peas are back in a very limited supply. The storm last Saturday tore many of them off the trellis and destroyed the plants. Those 50 mph winds were just too much for these tender vines. I’m sorry to disappoint you all. Many of you have been asking about them and there isn’t going to be much of a crop.

Broccoli is starting to trickle in. If you miss them in the market check for table sales Friday.

Yellow squash have been blooming for a week now. Unfortunately they are not being pollinated and won’t mature properly. I saw my first honey bee a few days ago on a patch of clover, so they’ll be workng the field soon. Hard to miss those big golden squash blooms.

That was the case when this came in the mail yesterday. While I keep fewer hives than I once did, have more responsibilities in other venues and have ceased the crazy stuff like climbing tall ladders in the bed of a pickup truck, there’s still plenty I can and need to do. Becoming a Master Beekeeper was a dream come true, and though it was accomplished 8 years ago, like my college degree, at the end I was left with a profound respect for how much I DON’T know. Real education does that to you, but it also teaches you how to study and learn and apply that knowledge . . . “wisdom” I think they call it. I’m glad God’s not done with me and I’m glad He’s not done with you either.

COOKING GRASS FED BEEF

Admittedly M@D is in a bit of a lull right now with our beef listings, but since the issue has come up recently and barbecue season is already upon us we think it’s a good time to take another look at the difference between grain and grass fed beef and how that impacts the way you cook it.

Grass-fed beef is not easy to describe, which is why it’s important to give it a try. When you talk to grass-fed beef fans, they all explain it in their own distinct ways. One thing that’s universal is that grass-fed muscle has a unique mouth feel. You don’t notice it with ground meat but it’s very noticable with steak and roasts as it has a particular bite or a chew to it. Not only does the diet affect this texture, but it is also tied to the genetics of grass-fed animals and the way their muscles are used. That’s why Dexter steaks may differ from Santa Gertrudis and Black Angus. Grass-fed flavor and texture also depend on the the methods the farmer is using.

Generally speaking, grass-fed beef has very little fat. It’s lean. It needs to be cooked in differently than grain fed beef. Don’t salt it before cooking as that can really draw out its moisture. You can add salt (and pepper) for taste after, not before. Also, when you’re cooking grass-fed beef, lower the temperature by 50 degrees and always give it time. “Low and Slow” is the rule. You don’t want to cook it quickly over high heat — in a pan or on a grill. Heat also draws out moisture. It goes from medium to well done in seconds. The less fat in a muscle, the faster it goes between temperatures. Fat is a buffer. It has a different melting point than muscle. When there’s no fat, there’s no buffer. 

One tried and true method of cooking grass fed beef to perfection is a nifty tool invented by the French called Sous Vide.

Pronounced “sue veed,” the term means “under vacuum.” Simply put, meat, vegetables, and so forth are vacuum-sealed in bags prior to being cooked using precise temperature control. The practice of Sous Vide cooking has long been employed in fine restaurants because of the many advantages it offers compared to traditional slow cooking methods.

With traditional oven-cooking, food is only perfectly cooked for a relatively short window of time. Take it out too soon and it’s undercooked (possibly dangerously so), take it out too late and it’s overcooked: dry, tough, blackened…ruined. This is because food in an oven or on a burner continues to cook as long as heat is applied to it, and for a while after. Thus, it’s relatively difficult to time everything in order to ensure perfectly-cooked food, and even the best chefs will occasionally under or over-cook meals. With Sous Vide, food will never exceed the programmed temperature controls. What this means is that once the perfect temperature is reached, it will not overcook. Even novice cooks will find it virtually impossible to produce anything less than perfect meals. Sous Vide guarantees consistent results with textbook doneness. Even the toughest cut of meat can be served fork tender when cooked for the right time at the right temperature.

And Sous vide cooks a lot more than just meat! Your market manager became a believer, and after that a user after trying sous vide keto cheesecake. As time has gone on an increasing number of our M@D family uses them so if this info has piqued your interest and you’d like additional first hand information, all you have to do is ask. :)

Avalon Farms: Hi everybody! I’m on the road today picking up a 55 gallon drum of organic fish emulsion fertilizer. Buying in this quantity is a first for me. 

The new Bok Choi varieties are ready. They are doing awesome on the (new to us) plastic covered raised beds. This is a new method of growing for us with lots of things to learn as always.

Broccoli and cabbage are also growing well and will soon be available. Summer squash are blooming. And the very first baby tomatoes are on the vines. (Well, they were this morning before the 50 mpg winds came through. Hopefully they hung on!)

Have you ever experienced an accident that there’s simply nothing you can do to fix it? That’s what happened to today’s newsletter. A great piece about the 2021 Dirty Dozen and Clean Fifteen (commercially grown) food list simply disappeared into cyberspace. Excited to finally offer some fresh vegetables! It’s been a slow spring here at Avalon but things are popping along now. Listed a small supply of asparagus, red and white russian kales, senposai and tokyo bekana greens. I also have several other pac choi type greens(and reds!) growing, but will have to wait till I get back home and find my notes to tell you about them because I can’t remember their names. Ha Ha

A CUSTOMER REVIEW

Thank you Mrs. M. for sharing your thoughts and giving permission to make them public.

You know me well and when Im unhappy with a product I let you know and I also let you know when Im excited about one.

I was disappointed to hear that Mr Danny had decided to retire from the market and I genuinely wish him well. I have enjoyed his produce for many years and selfishly couldn’t imagine what I was  going to do without him.

They always say when God causes one door he opens another.

When I saw the new listings from Martins Harvest I was happily intrigued. Last week I ordered an entire farm share complete with a really great zipper close bag. I am happy to report that so far I am loving everything I ordered. The Butterhead Lettuce is the best I’ve every eaten and the head was huge! We had it with sliced fresh pears and a homemade champagne vinaigrette dressing. The Red Leaf and Spring Mix have been fantastic in all sorts of other salads. There were enough Stir Fry greens that I added a little onion, carrot and peppers and it made a delicious full meal for the 2 of us. I am planning on mixing the Micro Greens with the remainder of the lettuces for a big chef salad tomorrow.

Over all, while I am sorry to lose Mr Danny I am thrilled at this new source and wish them great success in the Market At Dothan.

WELCOME NEW VENDOR!

We are excited to welcome Mike’s Pet Meats to our Market family. There is much to tell so I’ll start by sharing that your manager met Mike through a breeder of high quality German Shepherds. And if you are familiar with this person no doubt you’re grinning.

Mike’s Pet Meats come frozen, and more importantly for the nutrition of pets, are raw. We will list two different ground meat products: a 30 lb unit that is 100% beef muscle and a 10 lb tube (like a hamburger chub) that is 75% muscle and 25% organ meat (a heart/liver/tripe combo). Based on our experience, pets LOVE, LOVE, LOVE the organ meat blend. Both products come with safe handling instructions and can be thawed to divide, blend with other ingredients or cooked for your pet. Please note that while these are high quality meats, they are NOT prepared or intended for human consumption.

Grier Acres: Harry and Jeannie have been busy here lately.  We planted 4 varieties of onions a few weeks ago.  Our garlic is coming back from last year as well.  We have an asparagus plant that we are hoping to get finally get some fruit off this year.  We also have finally planted our bean and pea seeds as well as some collards.  Jeannie has some mustards and kale growing in the raised beds as well as some turnips.  These are on our house side of the property.  We are late but seeding some tomatoes, peppers, melons, squash, zucchini, and herbs.  With the cold weather coming this week maybe we were just in time!  Hope everyone has a blessed Easter.

So far, 2021 is shaping up to be another “interesting” year. This Thursday, Friday and Saturday proved to be unexpectedly cold. With frost tender crops (tomatoes, eggplant and squashes) in the field we had to cover them up to protect them from frost. The weather forecast was for 35, which isn’t so bad, but we are located in a colder microclimate and usually get frost when the forecast is 35. 

We won’t be taking it off till Sunday morning when the threat is over.

Happy Week of Easter everyone! There’s no getting around that Easter and Eggs go hand in hand: colored eggs for hunting, eggs for decorating, plastic eggs hung from a tree, etc. This week seemed like a fitting time to explore some creative ways to use these little miracles of nature. Rather than pick out two or three great recipes to share this week we’re sharing a few great collections. Danny has been with the Market many, MANY years and while he will continue to grow amazing produce he has decided to concentrate on growing for the pleasure of sharing with friends and family. He’s looking forward to trying some new things and remains a friend to our Market family. Danny’s is always willing to encourage those who wish to create their own backyard garden haven so if you’re up for some inspiration let Ros know and we’ll plan a visit. Danny’s garden is still the best kept secret in Henry County.

Welcome to our Family Farm in Marianna, Florida! Martin’s Harvest was founded by Walter and Tonya Martin in 2020 with a love for growing sustainable, eco friendly, and local produce. Our mission is to provide fresh, high quality produce with as little carbon footprint as possible. We do that by using only organic pesticides and herbicides as well as compostable and biodegradable packaging when available.

Soooooooooo . . . in last week’s newsletter we gave a shout out for the beautiful weather only to have to cancel the Market because of the weather! Market at Dothan operates year around in rain, wind, heat and cold, but we draw the line when Mother Nature gives us storms that could make it unsafe to travel. We don’t want growers or customers on the roads when conditions could be hazardous. Last week was the second time we’ve had to make that hard decision since 2016 and we hope it’s the last time. Please accept our apologize for any inconveniences and we appreciate your understanding.

CASABLANCA RANCH: It is safe to say that spring has sprung at the ranch. Most all my young fruit trees have budded out and some of the dormant cutting in the little pots at the barn are showing signs of life. But the surest sign of spring is all the pollen and my allergies going wild. The cows have almost quit eating hay and are on the young grass. D has been repairing some of the fences for me so we can control the grazing and rotate the herd and allow the grass to thrive. We also have welcomed 2 new calves to the ranch, and expect some more soon. I have reduced the herd to about 17 brood cows, but with D helping we plan to rebuild the herd to a bout 50 brood cows for now. We have several beautiful heifers and some of them are bred. I am dividing the new heifers into a different pasture area and these will become D and A’s herd, as me and the old herd begin to fade away. This will be a process, and the schedule will depend on the Lord as he gives me strength. Without them steeping up and helping I would be slowly liquidating the herd now. They did not come to help with any conditions, only to aid this old man. The transferring of the calves is all my idea. It is a thrill to me to not lose the excellent bloodlines I have developed over the years and to be able to impart some of my experience to them. They are diligent to come every day to help see to the needs of the cows and the chickens. I am continuing to build up the fruit and berry stock and to nurture them as best I know how.

”Why can’t I find___________ on the Market?” That’s a good question with a lot of possible answers!

  • It’s not in season
  • If it is seasonal possible crop failure as Avalon experienced not long ago
  • In the case of meat waiting for animals to grow, then waiting for the butcher is always an issue
  • An item may not be local to this area as we source from a 50 mile radius
  • YOU may be the person supposed to supply that! We are always open to new vendors who meet our sustainable standards. One person and one farm can’t do everything and we’re proud to be a COMMUNITY of like minded growers and producers each doing our part.
