Farm to Table Recipes

Grilled Mediterranean Vegetable Sandwich

Makes: 6 servings
Prep Time: 20 mins
Cook Time: 40 mins

Ingredients
1 eggplant, sliced into strips 
2 red bell peppers 
2 tablespoons olive oil, divided 
2 portobello mushrooms, sliced 
3 cloves garlic, crushed 
4 tablespoons mayonnaise 
1 loaf focaccia bread 

Notes / Directions
1. Preheat oven to 400 degrees F (200 degrees C).

2. Brush eggplant and red bell peppers with 1 tablespoon olive oil; use more if necessary, depending on sizes of vegetables. Place on a baking sheet and roast in preheated oven. Roast eggplant until tender, about 25 minutes; roast peppers until blackened. Remove from oven and set aside to cool.

3. Meanwhile, heat 1 tablespoon olive oil and cook and stir mushrooms until tender. Stir crushed garlic into mayonnaise. Slice focaccia in half lengthwise. Spread mayonnaise mixture on one or both halves.

4. Peel cooled peppers, core and slice. Arrange eggplant, peppers and mushrooms on focaccia. Wrap sandwich in plastic wrap; place a cutting board on top of it and weight it down with some canned foods. Allow sandwich to sit for 2 hours before slicing and serving.

Farm to Table Recipes

Farmers’ Market Pizza

Makes: 6 servings

Ingredients
1 tbs canola or grapeseed oil, plus more for brushing grill grate 
3 plum tomatoes 
2 tbs fresh oregano 
1 tbs red wine vinegar 
1 tbs olive oil 
2 cloves garlic, minced 
1/2 tsp salt 
1/2 tsp red pepper flakes 
1 1/2 cups broccoli florets 
1 red bell pepper, sliced into 3 wedges 
1 yellow or orange bell pepper, sliced into 3 wedges 
1/2 red onion, sliced into thick rings 
1/4 cup canola or grapeseed oil for tossing with vegetables 
1 Par-Baked Pizza Crust 
1 tbs capers, drained 
1/4 tsp ground black pepper 

Notes / Directions
1. Brush grill grate well with canola oil, and preheat grill to medium.

2. To make Tomato Sauce: Brush tomatoes with 1 Tbs. canola oil. Grill 5 minutes, or until tender and slightly charred. Purée tomatoes, oregano, vinegar, olive oil, garlic, salt, and red pepper flakes in blender or food processor. Transfer to bowl.

3. To make Pizza: Toss broccoli, bell peppers, and onion with canola oil in bowl. Place in grill basket or thread onto wooden skewers, and grill 5 to 7 minutes, or until tender. Cool until easy to handle, then thinly slice bell peppers.

4. Spread Tomato Sauce on crust. Top with vegetables, capers (if using), and black pepper. Place Pizza on grill, close lid, and cook 5 minutes, or until sauce is warmed and bottom of crust is crispy.

TIP #1: Choosing food that has traveled fewer miles (and therefore used less fuel) is good for the environment, while eating food that was grown organically and without harmful pesticides does your body good, too. Plus, supporting your local farmers ensures that they’ll stay in business for years to come :)

Sweet Zucchini Crumble

Silky smooth baked zucchini is the surprising filling in this sweet dessert. Like the best apple crumble, this dessert has a tender, lemony-sweet, spiced filling just waiting to be discovered beneath its irresistible, crunchy crust. Don’t count on having leftovers. From Farmer John’s Cookbook: The Real Dirt On Vegetables

Serves 6 to 8

4 1/2 cups flour
3 cups sugar, divided
1/2 teaspoon salt
11/2 cups shortening, softened, or butter, cold
6–8 cups thinly sliced zucchini (about 4 large zucchini)
2/3 cup freshly squeezed lemon juice (about 3 lemons)
1 teaspoon ground cinnamon
1/4 teaspoon ground or freshly grated nutmeg

1. Preheat the oven to 350°F.
2. Stir the flour, 2 cups of the sugar, and salt in a large bowl until well combined. Add the shortening or butter and cut it into the flour with a pastry blender or your fingertips until the mixture looks like coarse oatmeal.
3. Pour half of the mixture into a 9×13-inch cake pan. Using your fingers or a rubber spatula, press the mixture evenly into the bottom of the pan. Bake for 10 minutes. Remove the pan from the oven and set it aside.
4. Combine the zucchini and lemon juice in a large pot over high heat and cook until zucchini is tender, 8 to 10 minutes. Stir in the remaining 1 cup of sugar, cinnamon, and nutmeg. Simmer for 1 minute more. Stir in 1/2 cup of the reserved flour mixture and continue to cook, stirring constantly, until mixture thickens. Remove the pot from the heat to cool for 10 minutes.
5. Pour the zucchini mixture over the baked crust and sprinkle with the remaining flour mixture. Return the pan to the oven and bake until it is lightly browned and bubbly, 40 to 45 minutes.

Organic Workshop scheduled…The Alabama Organic Consumers’ Education Workshop Series will present a program, Educating Alabama Consumers on Organic Food, on Tuesday, July 30, 2013, 6:00 pm-8:00 pm, in Dothan at the Houston County Farm Center, 1699 Ross Clark Circle, Suite 4. Due to unusually high rainfall, the seasonal, summer crop availability is very limited. These times are usually temporary and transitional. While our typical summer harvest may not be abundant, we are still able to eat locally, year round. During these seasonal times, the availability will be more local, value-added products that are canned, baked, mixed, frozen, artisanal and delicious!
