Cauliflower "Fried Rice"

What I use changes depending on what’s available. ALL my ingredients are either locally sourced or organic. Adjust seasonings to taste. I used black pepper, cayenne pepper, garlic powder, dehydrated, cubed ginger
Serves: 9
Ingredients
1 Cup
Carrots
2 lbs
Cauliflower florets
1 bag
Broccoli florets
1/4 Cup
Extra Virgin Olive Oil
1/4 Cup
Tamari Sauce
1 Tbs
dehydrated ginger
Step by Step Instructions
- Bake and remove meat from 1 approx 3lb chicken
- In a food processor, pulse cauliflower, broccoli, carrots to about the size of rice. Cauliflower "rices" better semi-frozen.
- Place all ingredients in large bowl. Add Tamari sauce, spices, olive oil and mix well.
- Place in large roasting pan and roast at 375 F for about an hour, stirring every 20 minutes or so. Bake until vegetables soft.
