BLUEBERRY GORGANZOLA SALAD
1 (5-oz.) mixed salad greens
2 cups fresh blueberries
1 cup loosely packed fresh flat-leaf parsley leaves
1 cup loosely packed basil leaves
1 cup roasted, salted almonds*
3/4 cup sliced fresh chives (about 1-inch pieces)
3/4 cup crumbled Gorgonzola cheese
3/4 cup bottled raspberry-walnut vinaigrette
1/2 cup loosely packed fresh tarragon leaves
Preparation

Prep: 15 Minutes
Toss together all ingredients in a large serving bowl.

" We’re a small, three-generation dairy in Calhoun County, Florida, and we’re bringing back the healthy goodness of whole milk and other dairy items. When you taste the difference and see the healthy benefits of milk items that come from grass-happy cows, you’ll be enjoying whole milk items again and will know that you’ve made the healthy choice. That’s right, we’re stepping back to a time when cows grazed on pasture land, like it used to be, and they got all the benefits of the fresh air, the sunlight, and pastures full of fresh green grass. Studies show that cows that are allowed a primary diet of fresh grass produce milk with five times as much unsaturated fat than cows fed processed grains. That’s really good news for people who want the benefits of whole milk but need to reduce their “bad” cholesterol counts. 1/4 cup red wine vinegar
1/4 cup honey
1/4 cup white sugar
1 tablespoon Dijon mustard
salt and pepper to taste
1 pint strawberries, sliced
1 (8 ounce) mixed baby greens
1 cup sweetened dried cranberries
1 small red onion, sliced thin
1/4 cup crumbled feta cheese (optional)

Notes / Directions
1. Whisk the olive oil, vinegar, honey, sugar, mustard, salt, and pepper together in a bowl to make the dressing.

2. Toss the strawberries, baby greens, cranberries, and onion together in a bowl; top with the feta cheese. Drizzle the dressing over the salad to serve.

3/4 cup olive oil
1/4 cup red wine vinegar
1/4 cup honey
1/4 cup white sugar
1 tablespoon Dijon mustard
salt and pepper to taste
1 pint strawberries, sliced
1 (8 ounce) mixed baby greens
1 cup sweetened dried cranberries
1 small red onion, sliced thin
1/4 cup crumbled feta cheese (optional)

Notes / Directions
1. Whisk the olive oil, vinegar, honey, sugar, mustard, salt, and pepper together in a bowl to make the dressing.

2. Toss the strawberries, baby greens, cranberries, and onion together in a bowl; top with the feta cheese. Drizzle the dressing over the salad to serve.

" We’re a small, three-generation dairy in Calhoun County, Florida, and we’re bringing back the healthy goodness of whole milk and other dairy items. When you taste the difference and see the healthy benefits of milk items that come from grass-happy cows, you’ll be enjoying whole milk items again and will know that you’ve made the healthy choice. That’s right, we’re stepping back to a time when cows grazed on pasture land, like it used to be, and they got all the benefits of the fresh air, the sunlight, and pastures full of fresh green grass. “This is a quick, easy, and elegant dish. Serve as a main course with a good loaf of bread, or side dish.”

Original recipe makes 6 servings

  • 5 1/2 ounces goat cheese (COOP -Bulger Creek)
  • 2 cups coarsely chopped arugula, stems included (Priceless Farms)
    1 cup quartered cherry tomatoes
    1/4 cup olive oil (Charters Spice & Oil)

SAUSAGE, KALE & LENTIL SOUP
Ingredients
2 tablespoons EVOO, plus more for drizzling
1 pound hot or sweet Italian sausage, casings removed
4 cloves garlic, finely chopped
2 fresh bay leaves
2 stems fresh rosemary
1 carrot, finely chopped
1 large or 2 medium onions, chopped
1 potato, peeled and cut into small dice
2 tablespoons tomato paste
1 bunch black kale, stemmed and chopped
A few gratings fresh nutmeg
1/2 cup dry white or red wine
6 cups chicken stock
1 1/4 cups brown lentils
Shaved Pecorino cheese, for serving
Directions
Heat the EVOO in a soup pot over medium-high heat. Add the sausage and cook, crumbling with a wooden spoon, until browned. Add the garlic, bay leaves, rosemary, carrots, onions and potatoes and season with salt and pepper. Cook until the vegetables are soft, 7 to 8 minutes. Stir in the tomato paste and cook for 1 minute. Stir in the kale and nutmeg. Add the wine to deglaze the pot, stirring and scraping up any browned bits from the bottom. Stir in the chicken stock and 2 cups water and bring to boil (for thicker soup, use 2 cups less liquid).

Stir in the lentils and cook at a low, bubbly simmer until the lentils are tender, 30 to 35 minutes. Remove the rosemary stems and bay leaves.

Ladle the soup into bowls and top with a drizzle of EVOO and the shaved Pecorino.

SAUSAGE, KALE & LENTIL SOUP
Ingredients
2 tablespoons EVOO, plus more for drizzling
1 pound hot or sweet Italian sausage, casings removed
4 cloves garlic, finely chopped
2 fresh bay leaves
2 stems fresh rosemary
1 carrot, finely chopped
1 large or 2 medium onions, chopped
1 potato, peeled and cut into small dice
2 tablespoons tomato paste
1 bunch black kale, stemmed and chopped
A few gratings fresh nutmeg
1/2 cup dry white or red wine
6 cups chicken stock
1 1/4 cups brown lentils
Shaved Pecorino cheese, for serving
Directions
Heat the EVOO in a soup pot over medium-high heat. Add the sausage and cook, crumbling with a wooden spoon, until browned. Add the garlic, bay leaves, rosemary, carrots, onions and potatoes and season with salt and pepper. Cook until the vegetables are soft, 7 to 8 minutes. Stir in the tomato paste and cook for 1 minute. Stir in the kale and nutmeg. Add the wine to deglaze the pot, stirring and scraping up any browned bits from the bottom. Stir in the chicken stock and 2 cups water and bring to boil (for thicker soup, use 2 cups less liquid).

Stir in the lentils and cook at a low, bubbly simmer until the lentils are tender, 30 to 35 minutes. Remove the rosemary stems and bay leaves.

Ladle the soup into bowls and top with a drizzle of EVOO and the shaved Pecorino.

EMPTY BOWLS
Market At Dothan is excited to participate in this years Empty Bowls project benefitting The Wiregrass Food Bank on Saturday, February 28th at the Cultural Arts Center.
What is Empty Bowls Dothan?
Empty Bowls Dothan is an event to help support hunger prevention in the Wiregrass. On event day, bowls created and donated by local potters, community members, and students will be offered for sale. For $10 each, attendees will receive a bowl of their choice and a basic meal of soup, bread, and water. All funds raised from the sale of the bowls will go to the Wiregrass Area United Way Food Bank.
