Ode to Sweet Tea
Ever bump into something online that made you laugh? That happened to me this week when I saw a post about canning (using a water bath method) sweet tea concentrate. That was new to me and curiosity prompted me to click the comments to see if others had tried it. And there it was, right on top, a friend from Headland, AL questioning why on earth someone would go to all that trouble when sweet tea is fast and easy to make. Knowing her strong opinion on purchased tea I could just hear her saying that.
I didn't like tea growing up. I had actually left home when I learned to appreciate it. A sweet Hispanic lady in a neighborhood I was visiting loved on a cold college student with a cup of sweet HOT tea on a day when snow was piled up to our knees. It was love at first sip. I was hooked.

Granted, not everyone can drink tea or the sugar that the traditional brew contains, but there's no denying that it is symbolic for a lot of things in southern life. It is hospitality, comfort and heritage, a cultural signature if you will, passed down through generations. It cools on hot days, entertains on special occasions, comforts during grief, and binds churches and families together as there's always that one grandma whose tea is famous and nobody can figure out what she's doing different.
These days we have a lot of alternative sweeteners for our tea. We also have a lot more choices when it comes to tea. And thanks to crazy women with home canning equipment we can seal up concentrate in quart mason jars to use later if we want! Actually I'm tempted to try it just for the fun of it.
