Our most popular jam! My husband (pepper head that he is) tweaked this recipe until he had the most amazing SASSY Apricot Jam. Have no fear, it isn't "hot" but it is zesty. We don't usually eat this like regular jam, but it adds a whole new dimension to a sausage biscuit! This is the most awesome jam! It great as a dipping sauce for grilled pork or chicken, poured over cream cheese or added to BBQ sauce or stir-fry! Hubby loves it on vanilla ice cream. (I know, I know, but I love him) This jam is made with dried apricots, ripe bell peppers and habaneros. (Did you know habaneros have a fruity flavor?) Note that cooking will increase heat level.

100% organic einkorn flour. 100% whole wheat. 100% sourdough. Flour is sourced from American mills and farms. The ultimate staple food until only the last century or so, bread has rightly been used to symbolize life. However, it is because of the nutrition and easily-digestible properties of natural, whole wheat grain that our ancestors for thousands of years survived dark ages of wars, low technology and medicine, and hard labor. Modern wheat has been crossbred into dependence on pesticides, herbicides, and artificial fertilizers for its own survival, stripped of many of its nutrients, and loaded with gluten in a form that is difficult for the digestive system. For this reason, many gluten-sensitive shoppers or nourishment-minded bakers are turning back to the most ancient form of wheat in history: einkorn. Its genetic makeup is vastly simpler than that of other wheats, because it has never been crossbred. It has the lowest gluten, and, in our opinion, the richest and sweetest flavor. With the probiotics from sourdough (made using only wheat flour and the atmosphere of your local area), this bread could possibly be the healthiest food you could eat. Our sourdough loaves are crusty and chewy with a dense texture that is lightened by lots of little holes. It pairs with anything, but our favorite way to eat it is to slice thinly and serve hot and toasted with a smear of golden butter melting into every crevice. The whole wheat flavor is gentler than a nutty hard red wheat, but has a toasty character; the sourdough taste is not typically "sour" but really reminds us of some great sharp cheddar. Once sliced, this bread will usually last 3-5 days. Unsliced, it may last longer. Stale bread may be toasted to revive its quality. We recommend storing in a bread box or other container that has a lid but does not seal completely. For long-term storage, freeze loaf whole or sliced.
