Source: Carole Lolley (Entered by Greg Lolley)Quick and easy purslane recipe. Purslane is very high in Omega3 Fatty Acids. It has 5 times that of Spinach.
Serves: 2 servings
Vegetarian!
Ingredients
2 cup
Portulaca (Purslane)
1 tbsp
Olive Oil
2 tbsp
Parmesan Cheese
1 pinch
Salt and Pepper to taste
Step by Step Instructions
- Fill and small saucepan or wide skillet with 1 cup water and add garlic cloves turn heat to medium/high
- Bring water to a boil, add purslane, reduce heat to low. Cover saucepan or skillet and cook for 6 minutes. The cooking time will depend on how tender your purslane is. Young tender stems cook faster.
- Remove from heat and drain. Season with olive oil, salt and pepper. To serve dust with parmesan cheese. Just remember parmesan is a salty cheese, so easy on the extra salt till you taste it!
