Spotlight on EGGS
We are happy to have several growers that produce fresh eggs from healthy happy chickens who enjoy sunshine, fresh air, green grass, vegetable scraps and scratching for what God gives them. With Easter coming in a few weeks it’s a good time to think about stocking up on eggs because FRESH EGGS DO NOT BOIL WELL. Actually they boil just fine, but peeling them is a different story.
Most of the Market eggs are brown in color. One of the wonderful things about brown eggs is that you can create beautiful Easter Eggs with them just as easy as white ones, and brown eggs produce prettier colors: they’re earthy and less garish than the stark colors on white eggs.
For our customers who have their own chickens, you’ll want to make sure to thoroughly wash your eggs if you choose to dye them. Especially when you have your own hens, you’ll need to wash the eggs before dyeing… not because they’re dirtier than commercial eggs, but because they’re cleaner. Strange, huh? Eggs laid by your own hens still have the “bloom” on them, which is a natural barrier left by the hens to keep eggs fresh. Often, grocery store eggs must be washed (sometimes in chemical solutions containing chlorine or lye (yuck)because of the unsanitary conditions they’re laid in, so commercial eggs will already be missing the bloom. Your eggs will not have been treated this way, which is a good thing in most cases… but in the case of dyeing eggs, unfortunately the bloom can interfere with the process, so be sure to wash and dry your eggs first. If you have to use grocery store eggs, we’d also recommend washing them, mostly to remove any chemicals used to “clean” them, but also because some factory farm eggs are coated with mineral oil, double yuck. More about eggs next week . . . .

Farm to Table Recipes

ROAST LEG OF LAMB WITH LAVENDER & ROSEMARY


This roast leg of lamb is rubbed with the classic combo of rosemary and garlic, but gets an unexpected twist with the addition of chopped fresh lavender. It’s served with a sweet-and-sour shallot jam made from dates, honey and apple cider vinegar. foodandwine.com

1/4 cup plus 2 tablespoons extra-virgin olive oil
1/4 cup minced rosemary
3 tablespoons minced fresh lavender leaves. If unavailable, substitute 1 1/2 tablespoons herbes de Provence.
4 garlic cloves, grated
One 3 1/2-pound boneless leg of lamb


Kosher salt
Freshly ground black pepper
6 medium shallots, thinly sliced
1/2 cup pitted Medjool dates, thinly sliced
1 teaspoon honey
1/4 cup apple cider vinegar


Freshly ground black pepper
1. Preheat the oven to 450°. In a small bowl, whisk 1/4 cup of the olive oil with the rosemary, lavender and garlic. Season the lamb all over with salt and pepper. Rub half of the herb oil all over the inside of the lamb, then roll up the meat and tie with kitchen string to form a neat roast. Spread the remaining herb oil all over the roast and set it on a rimmed baking sheet.


2. Roast the lamb for about 15 minutes, until just starting to brown. Reduce the oven temperature to 375° and roast the lamb for about 1 hour longer, until an instant-read thermometer inserted in the thickest part registers 130° for rare meat. Transfer the lamb to a carving board and let rest for 30 minutes.

3. Meanwhile, in a medium saucepan, heat the remaining 2 tablespoons of olive oil until shimmering. Add the shallots, dates, honey and a pinch of salt and cook over moderate heat, stirring occasionally, until the shallots are softened, about 7 minutes. Add the vinegar and cook, stirring occasionally, until most of the liquid has evaporated and the jam is thick, 3 to 5 minutes; season with salt and let cool. The shallot-date jam can be refrigerated for up to 5 days. Bring to room temperature before serving with the roast leg of lamb.


4. Untie the lamb roast and slice the meat against the grain. Serve with the shallot-date jam.

PORK, APPLE & SAGE MEATLOAF


Recipe recommended by Sandspur Farms from culinaryginger.com

2 large sweet apples, cored, peeled and grated
1 large yellow onion, finely chopped
2/3 cup day old bread, ground into breadcrumbs in the food processor
1/2 cup milk
2 pounds ground pork (Sandspur Farms)
1/2 teaspoon dried oregano
1 teaspoon dried basil
1/4 cup fresh sage leaves, chopped
1 large egg, lightly beaten (Sandspur Farms or Kathy’s Kluckers)
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
Organic Ketchup


Instructions
Preheat oven to 400 degrees F. Line a small baking sheet with parchment paper. Wrap the grated apples in a clean towel and squeeze out as much moisture as you can. To a mixing bowl add the apples, onion, breadcrumbs, milk, and leave for 5 minutes. After 5 minutes add the ground pork, oregano, basil, sage, egg, salt and pepper. Mix until everything is well combined. Turn out onto the baking sheet and mold into a meatloaf shape, about 10 inches long and 5 inches wide. Top with ketchup. Bake for about 1 hour, or until a thermometer when inserted into the center reaches 165 degrees F. Remove from the oven and allow to rest for 10 minutes before slicing and serving. Serve with ketchup.


Culinaryginger.com has a marvelous Apple Ketchup recipe that is recommended to be served with this recipe in lieu of traditional ketchup. It can be adapted to use Sandspur’s organic applesauce rather than fresh apples for anyone wanting the total taste experience.

They love to make food from scratch and sell at local farmer’s markets. Whole wheat bread and fantastic pretzels are specialties. EASY SPINICH, EGG & CHEESE SANDWICH


Recipe by Spring Hill Farm

2 slices Honey Whole Wheat Bread, toasted (Spring Hill Farm)
1 farm fresh egg, fried in 1 tsp butter (Sandspur, Kathy’s Cluckers or Hortons Farm)
2 teaspoons mayonnaise
1 slice Swiss Cheese
4-5 Spinich Leaves, stemmed


Toast bread and spread lightly with mayonnaise.  Top with spinach, cheese and egg.  Add salt and pepper to taste.   
So easy and good.  We even enjoy this for a quick and healthy dinner!

Apparently she is a natural because her chickens rewarded her efforts handsomely and she now shares the abundance with the rest of us! Kathy’s happy cage free feathered ladies are located in Henry County Alabama. All chickens are cage free, antibiotic free and added hormone free.

KALE WITH SAUSAGE & WHITE BEANS


Curly kale is shown for this recipe, but you could use any kale, as well as chard, turnip greens, beet greens, or collards. A splash of vinegar (sherry, red wine, cider) is a nice touch right at the end of cooking. Cajun type seasoning also works well with this when using regular sausage.

1 Tablespoon olive oil
1/2 lb bulk sweet Italian Sausage or other sausage (use gluten free sausage if cooking gluten free)
1 onion sliced thin (about 1 ½ cup sliced onion
2 large garlic cloves sliced thin
1 pound kale (1 large bunch), center thick rib removed, leaves roughly chopped
1/2 cup chicken or vegetable stock
1 15 oz. Can of white beans, rinsed and drained
salt and pepper
1. Heat the olive oil in a large sauté pan or wok over medium-high heat and add the sliced onions. Caramalize onions, pour into dish and set aside. Add bulk sausage. If you can’t find bulk sausage, slice the sausage into bite size chunks. Cook till done and add to bowl with onions. Add the garlic, cook for another minute and add to onions and sausage.


2. Add kale to the pan or wok. Sprinkle salt over everything, then add the stock. Cover the pan, and bring to a boil. Lower the heat to medium, partially cover with a lid and cook for 2 minutes.


3. Uncover, add onion, sausage and garlic to the kale. Mix everything well (the kale will have cooked down by now) and add the beans. Cover the pot again and lower the heat to low. Cook another 5 minutes, then turn off the heat. Let stand 5 minutes, then serve.

Horton’s Farm was born from a deep desire to live simply and sustainably, and to help others in their quest to do the same. We have grown into a green  family owned business in sunny south Alabama. Unique creations from honest ingredients for real people – that is what we do and that is who we are. No generic agribusiness factory here – just beehives, herbs, flowers, vegetables, chickens, horses, pets and  the occasional dirt eating kid.  Our tasty, beautiful and healthful items reflect our core values of  excellence, sustainable living, education and simplicity.  All products  originate from our chemical free beehives and/or sustainable gardens, and each small batch artisinal product is made with great care to help you live life to its fullest.
The farm started when “Mama Roz” as some call her, started keeping honeybees fifteen years ago. Mama Roz has gone on to become a Master Beekeeper and is currently a board member of the Alabama Beekeepers Association. While all this was going on, the Mr. at the farm developed methods to successfully cultivate and produce the raspberries and rhubarb he missed from his childhood in Oregon. Sustainable fruit, berry and some vegetable production is now a standard part of the farm operation.

CHINESE CHICKEN SALAD


If you’re familiar with this delightful one dish meal you probably realize there are many ways you can make it! What follows is a general guideline for you to adapt to your own food preferences.

Prepare Dressing: Mix and Whisk Well
2 tablespoons reduced-sodium soy sauce
1 tablespoon very finely chopped peeled ginger
1 tablespoon + 1 teaspoon oil (olive, sesame, canola or vegetable)
1 tablespoon hoisen sauce
1/2 teaspoon sriracha (optional)
1/2 teaspoon kosher salt
1/4 cup rice wine vinegar
1/4 cup honey (optional)


Prepare Salad
1/2 cup slivered almonds, toasted 2-3 minutes in skillet and cooled
2-3 teaspoons sesame seeds, toasted in skillet and cooled (white, black or combination)
appx. 1 lb cooked chicken – my be rotisserie chicken, cooked chicken breasts or dark meat. turkey can be substituted.
appx. 1 lb cabbage, halved & shredded into thin strips. You may use green cabbage, napa cabbage, red cabbage or a combination of them
2 carrots, julienned
3 scallions, white and green part, washed and thinly sliced
1/2 cup crispy noodles. Wontons, Chow Mein or Ramen type noodles may be used
Drizzle dressing over combined salad ingredients. Mix and serve.

Charter Spice and Oil company began with offering the Wiregrass infused Oils and Vinegars in many rich and exotic flavors. (It is the BEST on Market salad greens.) Olives are the oldest cultivated fruit in the world. Olive oil has been used for thousands of years for everything from skin care to an antibiotic. Farm to Table Recipes

MARKET CHILI


1 1/2 cup dried kidney beans (Charter)
1/4 lb sliced bacon cut in 1 inch pieces
1 lb ground beef (Smith Farms & Sandspur)
2-3 carrots, chopped (about 1 cup) (Sandspur)
1 large green bell pepper, cored, seeded and chopped
3 cloves garlic, finely chopped
1 1/2 tablespoon no-salt-added chili powder (Charter)
1/2 tablespoon cumin (Charter)
2 cans no-salt-added diced tomatoes
1/4 teaspoon sea salt


Sort through beans and remove and discard any small stones or debris. In a large bowl, cover beans by 3 inches with cold water, cover and set aside at room temperature for 8 hours or overnight.
Drain soaked beans and transfer to a large pot. Cover by 2 inches with cold water and bring to a boil; skim off and discard any foam on the surface. Reduce heat, cover and simmer, gently stirring occasionally, until beans are tender, 1 to 1 1/2 hours. Drain beans and set aside.
In a large pot over medium-high heat, saute bacon, carrots and onion, garlic & pepper. Carrots should be a bit soft and the onions clear. Remove and set aside. Add ground beef to bacon drippings and brown. Add bacon and veggies, beans, seasonings & tomatoes to the pot with the ground beef and cook about 45 minutes for flavors to blend. Add additional water and adjust seasonings if necessary. Serve with cornbread or corn chips. Optional to garnish with sour cream, shredded cheddar cheese and/or cilantro

CINNAMON APPLE PORK CHOPS


2 tablespoons reduced-fat butter, divided
4 boneless pork loin chops – available from Sandspur Farms
3 tablespoons brown sugar
1 teaspoon ground cinnamon – available from Charter
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
4 medium tart apples, thinly sliced
2 tablespoons chopped pecans
In a large skillet, heat 1 tablespoon butter over medium heat. Add pork chops; cook 4-5 minutes on each side or until a thermometer reads 145°. Meanwhile, in a small bowl, mix brown sugar, cinnamon, nutmeg and salt.
Remove chops; keep warm. Add apples, pecans, brown sugar mixture and remaining butter to pan; cook and stir until apples are tender. Serve with chops. Yield: 4 servings.

ROASTED WINTER VEGETABLES


1 Onion, cut in vertical strips
1 Red Potato, washed and cubed
1 beet, peeled and cubed
1 small butternut squash (or sweet potato), peeled & cubed
1 lb fresh or frozen brussel sprouts
2 or 3 carrots, washed & sliced
Toss all prepared vegetables together in oven proof baking dish. Sprinkle with kosher salt and pepper. Drizzle with Blood Orange Infused Olive Oil* (available at Charter Spices & Oils)
Bate at 350 degrees for 45 minutes

THANK YOU for your participation in MarketatDothan.locallygrown.net This message is just a brief announcement about upcoming market dates and a few tiny items concerning market transition as we enter the new year!

1.You noticed that the newsletter looks different. This is because the new administrator is learning html. Please bear with me as I navigate a part of the internet that is quite new and very different!


2. Market will reopen Saturday January 9 @ 5pm till Tuesday, January 12 @ 5pm. Pickup is at Dothan Nurseries Friday January 15 from 10am – 12pm. If it is too cold to be outside pickup will be in the Greenhouse.

3. We are transitioning to market bags only. If you have not already furnished the market with re-usable bags we can supply them. Cost is $1 per bag which is refundable when returned or when you furnish your own. For customers with large orders, please be mindful to furnish enough to hold your purchases. For most people rotating two bags from week to week works great!


4. New vendors are coming! Stay tuned!

5. As in the past, we strive to bring you the highest quality FRESH LOCAL produce in the Wiregrass. This has always been a chemical fertilizer and pesticide free market. It is the reason the market was started, and the reason we are still here. Our farmers are not large scale certified or commercial producers, but smaller growers who are passionate about quality and proud to offer the kind of whole and healthy food they put on their own plates.

Farm to Table Recipes

SAUTEED MIXED GREENS
Ingredients:
1/4 cup pine nuts
2 Tbsp olive oil
4 garlic cloves, minced
1/4 cup golden raisins
1 bunch kale, chard, collards, or turnip greens, etc., about 1 pound, tough stem centers removed (if any) and discarded, greens chopped
1/2 to 1 teaspoon red pepper flakes
Roughly 1/2 cup dry white wine or water
Salt and pepper to taste
Method
1 Heat a large sauté pan hot on medium-high heat and add the pine nuts. Toast them until they are fragrant and begin to brown. Pay attention as pine nuts burn easily. Stir or toss the nuts frequently. Once they are toasted, remove from pan and set aside.
2 Add the olive oil to the pan and swirl it around. Add the garlic and sauté for 30 seconds; the pan should already be hot, so it won’t take long for the garlic to begin to brown. Add back the pine nuts, add the raisins and the greens and mix well. Sauté, stirring often, until the greens wilt and begin to give up some of their water, anywhere from 1-2 minutes for spinach to 4-5 minutes for collards or kale.
3 Sprinkle a little salt and red pepper flakes on the greens. Add the white wine (can substitute water)—use a little more wine if you are cooking collards, a little less if you are cooking spinach. Toss to combine and let the liquid boil away. Once the liquid boils off, remove from heat. Add salt and pepper to taste.
