Farm to Table Recipes

Grilled Cheese Sandwich with Bacon and Pear

Ingredients
Springhill English Muffin Bread, sliced
Sandspur Bacon, cooked
Local pear
Sharp white cheddar cheese
Grass Fed Butter, softened and spreadable
Method

1. Heat a cast iron skillet to medium high heat. Layer your sandwich – bread slice, cheese, pear slices, bacon, bread slice. Spread butter over the top of the sandwich. Place the sandwich top side down (butter side down) on the hot pan. Butter the exposed side of the sandwich. Let cook for a minute and then use a metal spatula to turn the sandwich over to its other side.

2 While you are toasting the sandwich on the remaining side, press down on the sandwich with a spatula. Alternatively, you can mimic a panini press (albeit without the ridges) by heating a smaller cast iron pan on a separate burner. Use the weight of this pan to press down on the sandwich from above.
The sandwich is done when the sides are toasted and the cheese is melted. Cut in half and serve.

A Tomato Sandwich Worthy of a Little Bacon
Ingredients
3 slices bacon, cooked crisp, crumbled and rendered fat reserved
1 room temperature egg
1 clove garlic
1 avocado
Juice of half a lemon
3/4 cup vegetable oil
The Bacon-Avocado Aioli
Toasted slices of a good rustic Italian bread
The best tomatoes you can find, sliced about 1/4 inch thick
Salt and pepper
Notes / Directions
1. Process the bacon, egg, garlic, lemon juice and avocado in the bowl of a mini food processor until smooth. Add the vegetable oil and the rendered bacon fat through the holes on the lid slowly while continuing to process until very smooth and thick. Refrigerate for about an hour to thicken a bit more.

2. Slather as much of the aioli as you like on a slice of the toast. Top with a few slices of tomato and sprinkle with salt and pepper. I like these open face but if you like, slather a second piece of bread with more of the aioli and place on top.

“While there is a time for everything, and a season for every activity (Ecc3:2) we at Sandspur Farms have found our time for a few things.

Our time to present to you our grass-fed and pasture finished beef has finally arrived! After much research, we decided to again raise purebred Texas Longhorns. (Research and they have been a long time family favorite.) The factory farms and feedlots of today are not interested in longhorn cattle because 1-their horns (and they are large, some 5ft wide) and 2-their naturally lean meat. Longhorns have not been the focus of “playing” with genetics to gain weight on grain because they have a natural system that does not gain weight as quick as other breeds. Our cattle are never given hormones, any type of steroids or growth enhancing medications. Their diet is grass and hay. We give them minerals and salt as needed. Our meat is inspected and approved during processing by a USDA inspector and carries the USDA seal of certification. Here’s a link (http://texaslonghornlandandcattle.com/longhorn-beef-nutritional-comparison.aspx) for a full nutritional study but in short it states, that a 3.5 oz serving has less cholesterol and fewer calories than the same size serving of white chicken meat or turkey or even the lean ground beef at the store. Why? Because all of the lean cuts are made into ground beef, creating the leanest beef possible! CHECK IT OUT! Our other time we have found is that we are watching the pigs & vegetables grow. A time to grow is a time to wait. They will all be ready very soon. So while we’re waiting on them, we’ve been around another source of heat (besides the sun). The kitchen! A Tomato Sandwich Worthy of a Little Bacon
Ingredients
3 slices bacon, cooked crisp, crumbled and rendered fat reserved
1 room temperature egg
1 clove garlic
1 avocado
Juice of half a lemon
3/4 cup vegetable oil
The Bacon-Avocado Aioli
Toasted slices of a good rustic Italian bread
The best tomatoes you can find, sliced about 1/4 inch thick
Salt and pepper
Notes / Directions
1. Process the bacon, egg, garlic, lemon juice and avocado in the bowl of a mini food processor until smooth. Add the vegetable oil and the rendered bacon fat through the holes on the lid slowly while continuing to process until very smooth and thick. Refrigerate for about an hour to thicken a bit more.

2. Slather as much of the aioli as you like on a slice of the toast. Top with a few slices of tomato and sprinkle with salt and pepper. I like these open face but if you like, slather a second piece of bread with more of the aioli and place on top.
