SWEET CAKE BAKERY…
“Now available from Sweet Cakes Bakery-
FRENCH BREAD, YEAST ROLLS & GNOCCHI!
Gnocchi is a pasta made from not flour and eggs, but…wait for it….potatoes! Gnocchi is wonderful, light, fluffy and delicious as well as being a unique alternative to plain old pasta! My homemade gnocchi is sure to knock your socks off when you include it in any dish, but it is especially good in soups and stews. Homemade gnocchi is so much better tasting than store-bought and without the preservatives! A definite win-win! Gnocchi is also a lower-gluten choice compared to pasta. Try some this week and fall in love!
Homemade Cinnamon Rolls! Lovely, cinnamon goodness rolled and smothered in a sweet icing; available by the dozen or half dozen!
Rosemary Bread, a savory round loaf full of herbs, with a fine, soft texture and utterly delicious! I will be adding more bread over the next few weeks, so be sure to check in and see what is new! Coming soon will be Potato Bread, Butter Bread and French Bread, all homemade! Thank you so much for your support and patronage!”

“WINTER WONDER”…
Message from Jennifer @ Sandspur Farm:
" This winter has been different, at first I was mad and upset with crops being ruined when some were reaching their prime. To see turnips shatter like glass from being frozen is ugly. But then I changed my mind. Without winter, pests in the garden would continue, there would never be an end to their cycle. So now I am happy to say that winter is not all bad. It’s the reset button for growing things. I’ve included some quotes I found online. The most important is the Bible verse from Deuteronomy 11:13-15. It says “It shall come about, if you love the Lord your God that He will give the rain for your land in its season that you may gather in your grain and your new wine and your oil. He will give grass in your fields for your cattle, and you will eat and be satisfied.”
Our ancestors didn’t have greenhouses back in the 17 & 1800s, they grew what they could during the spring and summer and stored for winter. To them winter was horrible. We have so many luxuries in life to be thankful for. Giving our lands a rest period or at least a slower pace, isn’t all bad."
Thanks Jennifer for sharing your optimism & farmer’s perspective!

HARD FREEZE HURT CROPS…Sharing this message from one of the BEST growers to show how hard our farmers work and the RISKS they take in bringing fresh, local produce to our community each season…
“I lost turnips and broccoli and siberian kale on the first night (Jan. 7) but last night (Jan. 8) hit me even harder all 300 heads of lettuce, cauliflower, radishes – GONE – I will not know about cabbage for a couple days i am hoping that some of the younger leaf lettuce will rebound and maybe some of the broccoli will produce side shoots in a week the only thing I can promise for next week is vates curly kale -5 and butternut-5 hopefully warmer weather will bring out collards young cabbage and younger broccoli. Thats what you call taking a hard punch! I will start replanting tomorrow and cutting back lettuce.” So VERY GRATEFUL for our HARD WORKING growers!

Farm to Table Recipes
Sautéed Greens with Pine Nuts and Raisins Recipe
Yield: Serves 2,
INGREDIENTS
1/4 cup pine nuts
2 Tbsp olive oil
4 garlic cloves, minced
1/4 cup golden raisins
1 bunch kale, chard, collards, or turnip greens, etc., about 1 pound, tough stem centers removed (if any) and discarded, greens chopped
1/2 to 1 teaspoon red pepper flakes
Roughly 1/2 cup dry white wine or water
Salt and pepper to taste
METHOD
1 Heat a large sauté pan hot on medium-high heat and add the pine nuts. Toast until fragrant and begin to brown…pine nuts burn easily. Stir or toss the nuts frequently. Once they are toasted, remove from pan and set aside.
2 Add the olive oil to the pan and swirl it around. Add the garlic and sauté for 30 seconds; the pan should already be hot, so it won’t take long for the garlic to begin to brown. Add back the pine nuts, add the raisins and the greens and mix well. Sauté, stirring often, until the greens wilt and begin to give up some of their water, anywhere from 1-2 minutes for spinach to 4-5 minutes for collards or kale.
3 Sprinkle salt and red pepper flakes on the greens. Add the white wine (can substitute water)—use a little more wine if you are cooking collards, a little less if you are cooking spinach. Toss to combine and let the liquid boil away, remove from heat. Add salt and pepper to taste.
