Our babies are fed a diet of non GMO feed, veggie scraps and free range in the garden. The flock consists of Cayugas that lay large eggs with a black/gray bloom, Muscovy which lay light colored eggs and Khaki Campbells and Pekin that lay large white eggs. Eggs are gathered every morning lightly cleaned to preserve the natural bloom and refrigerated. Duck egg yolks are larger and higher in nutrition and have a richer/creamier taste than chicken eggs.

For authentic Italian pesto we select only the smaller, younger leaves, because they are the sweetest. If you ever discover someone who thinks they don't like pesto, try making them pesto with these leaves! I, however, am convinced that such a person does not exist. Leaves may come on the stem or individually; we recommend storing in fridge and making pesto within a couple of days, or as soon as possible. Once crushed into basil pesto the shelf live should be longer, about one week.
