Nana’s Tea Cakes
Hi! I’m Sherrie Shown, aka “NANA’S TEA CAKES”. “NANA’S TEA CAKES” are not just any run-of-the-mill Tea Cakes. They are made from an Old Family Recipe and are the most delicious Southern Tea Cakes this side of the Mississippi! Once you taste them, I am sure you will agree. They are addictive! They are all natural and made with the finest organic ingredients.
I have been baking Tea Cakes for family and friends for as long as I can remember. They have told me for years that I should sell them, so I finally decided to do just that. They come wrapped in elegant bags with matching bows. NANA’S TEA CAKES" are a special treat for you and your family. They also make very thoughtful and delicious gifts. I have been a customer of the Market since the very beginning. I love the food and all the ladies who run the show, and I am SO happy to now be an official part of the Market At Dothan!
GROWER & MARKET NOTES
We were glad to see Danny’s Greens back on the Market last week. They sold out very quickly. One northern relative reported that their family eliminated winter colds by eating fresh greens every day. While we can’t claim this works for everyone, it did bring home that fact that our bodies need cold weather crops during the cold times of the year.
Speaking of winter colds, everyone knows that Vitamin C is essential for keeping your immune system up. M@d still has a variety of clean local citrus, rich in natural Vitamin C. Both Satsumas and Kumquats are available from several of our market vendors.
Taking it a step further, for those who like to preserve seasonal bounty, Richter Farms uses Pectinase to dissolve the “extra” material on her satsuma slices before canning them. This product is available on Ebay and Amazon. Bewitching Kitchen explains what it is and shows how it works.
AVALON FARMS: Sorry not to have spoken to you for awhile, it’s been an interesting month all around. Probably for you too. But we’re all still here and moving forward as best we can.
Here are a few celery growing in an aquaponics bed (above). This aquaponics system is “powered” by goldfish (below). The celery are getting all their nutrients from the fish.
If you remember, in the past I used a DIY heat table for starting spring transplants. Just upgraded to a professional grade 4 ft x 8 ft mat. (So I better up my game! ) This is in the greenhouse we built from recycled windows last year. The plants should get plenty of sunlight out here.
Most people LOVE a good hearty “stick to your bones” soup on cold days. We couldn’t resist sharing this low carb CREAMY TACO SOUP recipe that’s been a hit with everyone who has tried it. It can be made with any type ground meat (beef from Casablanca or Smith Farms or Smith Farms lamb) and Danny’s Green Onions make a great garnish.
1 lb ground meat
1 large chopped onion
3 cloves garlic, chopped
1 small green pepper, diced (optional)
1 10 oz can Rotel tomatoes with chilies
1 8 oz brick cream cheese
2 Tbs Taco Seasoning
Salt and Pepper to Taste
14 oz Beef Broth (about 1.5 cups)
1. Brown meat with onions and garlic.
2. Add peppers, tomatoes, cream cheese and seasonings. Heat on low stirring often as cream cheese softens.
3. When cream cheese is softened and mixed well add beef broth. Continue heating on low till it simmers. Do not boil and do not continue cooking or it will affect the taste of the cream cheese.
4. Serve and garnish with any combination of the following:
Avocado Slices
Chopped green onion
Guacamole
Sour Cream
Cheddar Cheese
Cilantro
Lime Juice

GROWER & MARKET NOTES
Mayim Farm sends word they are waiting for their small leafy green vegetables to grow large enough for harvest. Such is the case with winter vegetables. While they DO grow, it’s not always as fast as we would like! That being said, Danny’s Greens has lettuce and green onions (scallions) available this week.
The chickens at Horton’s Farm keep outdoing themselves! Yesterday 20 eggs were collected! It has to be something with the sunshine we’ve enjoyed this week. They’ve surrounded and kept Ros company several afternoons while harvesting pecans. So much fun seeing the dog, Mopsi, the chickens and the kitties interact and enjoy each others company on such days.
In case you missed it last week Duck Eggs from M@D friend Don Smith, listed under Seasonal Groweors, have been reduced. This is a great opportunity to try them and find out for yourself why he can’t seem to keep up with demand.
Mr. Paul Anderson of Casablanca Ranch graciously gave permission to share some of his Casablanca Cowboy Report. We hope this bit of sustainable gardening and his corresponding take on life from a few weeks back brings you a smile.
“I have ordered 6 Elberta peach plants due by Monday. Me and Bogart and ole Author (Ritus) dug the holes yesterday. I do not want to put a thirty dollar plant into a thirty cent hole. I have a mulch pile that I mix topsoil and chicken, cow and horse manure with a tiller. (I have an ample supply of that here on the farm). I will mix that with the soil I took out of the hole and firm it around the root system, then use a paper feed sack to cover it to restrict grass from growing in the hole, and put bark mulch over it to hold the moisture. Then as with all plants I will tend it as it is needed but it is up to the provision of the Lord for it to live, to grow, and to produce fruit. (Is this not also the case with our living and growing and producing fruit for our Lord. I love this life on the farm. It is like the life of a Christian, if I simply stick the plants into the ground and abandon them, they will not make it. Without water and proper soil and fertilizer, weeding and pruning they will wither up and either die or be of no benefit. Very similar to our life as a follower of our Lord, we need constant tending and care to thrive and to bear fruit for the Master).”
We thank you for your interest and support of our efforts to bring you the healthiest, the freshest and the most delicious locally-produced foods possible!

Eggciting Recipies
Grower/Market Notes
BITES OF MANY SORTS
This week I thought I would share some basic Egg Bite info, a recipe if you will, that I’ve been using since last summer when my mom introduced me to them. Her very Italian recipe is listed in a previous newsletter and I’ve had fun ever since experimenting with flavors, seasonings and ingredients.
The beauty of an egg bite is its simplicity, basically a mini quiche that can be made ahead and stored in the refrigerator for a quick healthy breakfast or anytime pick me up snack. They can be as lean or as fatty as you like, keto or carb rich, vegetarian or meat lovers. They keep in the refrigerator up to 10 days, travel well and are a fun addition to breakfast gatherings.
For the record this is old style grandma cooking where you use a bit of this and a pinch of that. I never measure.
First off – pans. If you use a muffin tin or 4 oz mason jars you’ll have to grease them for the bites to come out. Silicone molds eliminate the need for that and has become my preference as they don’t brown or crisp as easily.
Basic recipe: 6 or 7 eggs
a generous handful of your favorite shredded cheese
about a teaspoon of salt (I like pink salt)
a good shake of pepper
(optional) a couple tablespoons of milk, cream, or sour cream.
This alone makes a great basic no nonsense egg bite. Cook at 350 till a toothpick comes out clean, about 20-25 minutes. Test with a toothpick.
The fun comes in with additional ingredients and is only limited by your imagination: What follows are some I’ve tried and will use again:
chopped bacon | wilted kale | finely chopped onion
chopped ham | wilted spinich | black olives
sausage | mushrooms | chopped peppers
pepperoni | cooked asparagus | chopped roma tomatoes
canned salmon | artichokes | basil, organo, thyme, etc
Italian Sausage | chopped onions | capers
Anchovies (sparingly!) | blue, swiss or feta cheese | specialty olives |
The beauty of this method is that the flavor combinations are only limited by your imagination. If you know of a great ingredient not listed here speak up because it’s definitely worth trying!
GROWER & MARKET NOTES
We have put the Market Page link back into the newsletter. If you did not notice it’s near the top and will remain there. Our regular links may be found near the bottom of the home page at marketatdothan.com.
As those who ordered last week know Danny’s Greens took the proactive step of cancelling all orders due to a covid scare. Thankfully it was a false alarm however Danny has decided to give his beds a chance to grow a bit more before relisting and will have product available next week. He sends his thanks for your continued support.
The young chickens at Horton’s Farm have started laying like crazy and we find ourselves overrun with eggs. So we’re running a special on eggs this week. For health and safety, our eggs will not be handled for 48 hours prior to Market delivery.
We thank you for your interest and support of our efforts to bring you the healthiest, the freshest and the most delicious locally-produced foods possible!

Food Trends in 2021
Grower/Market Notes
LOOKING FORWARD
Most folks I’ve heard speak of it are glad to put 2020 behind us and look forward to this being a better year. Good year or bad, one constant is that we have to EAT regardless, and one of the reasons Market at Dothan exists is to bring you nourishing Fresh, Local, Sustainable farm products Year Round. That being said, for better or worse, we’re still here and our only plan is to continue to serve you to the best of our ability. We appreciate how you’ve stuck with all the changes in the Market starting with accepting a new Market Manager 5 years ago with the first newsletter of 2016!
Nostalgia aside – the challenges 2020 forced upon us did change some things about the way America eats, primarily with delivery and home prepared meals. Food system experts don’t see that trend changing much even with a vaccine in production now. For the rest of this section we’ve assembled some of the more interesting trends/predictions already in publication for 2021 and will list the links at the bottom if you want to check into it further. Enjoy!
1. Both Eating Well an Better Homes and Gardens reports that ”Next Level Charcuterie” will be a thing in 2021. If you’ve not heard the word you’ve seen it for years: those lovely trays with an array of savory bite size pieces of deliciousness that make their appearance at various events.
2. While breakfast has been the most important meal of the day as long as anyone remembers, Whole Foods is preparing for people to want more variety, ”Epic” they call it. They plan to offer gourmet egg bites, an assortment of healthy bread and grain products and “keto pancake cups”, whatever that is. Delish & BH&G also report that breakfast will become more popular.
3. Several sites have reported that Upcycled Foods to Reduce Waste will gain in popularity. While we see this as a positive trend, it’s important that “upcycling” does not include unnecessary processing. Whole Foods is adding many products in this category.
4. Increased creativity in coffee and kombucha products. Whole Foods will offer a large selection of ramped up kombuchas and coffee will show up in a lot more products. Check out our Market Discussion Page for a great informative video on making your own.
5. Chickpeas. It won’t be just hummus anymore and will replace cauliflower’s most popular vegetable status. Stores will carry many variations of them, including flour, and there are plenty of great recipe ideas available through Pinterest out there already.
6. Grab your Balls! Canning, Freezing and Fermentation are making a comeback! Of course there are those of us for whom it never went away . . . .

GROWER & MARKET NOTES
Recently a relative shared about how her family stopped constant colds and flu during the winter months . . . . they made a point of eating some sort of leafy green vegetable EVERY SINGLE DAY.
On that note we’re happy to tell you that Danny’s Greens has both lettuce and green onions listed this week. We’re looking forward to seeing what other great greens are listed by our growers this week.
Merry Christmas to your Market Manager! We’re happy to report that the roof of our two story she shed/honey house was completed right before Christmas. It still has to be plumbed, wired and furnished before all the equipment can be consolidated in one functional work space. Cleanup is underway and work has begun on sorting what gets fixed, what gets thrown out and how to arrange everything for maximum efficiency.
We thank you for your interest and support of our efforts to bring you the healthiest, the freshest and the most delicious locally-produced foods possible!
Dec. 12, 2020 Last M@D Newsletter of 2020
ROS’S RAMBLINGS
What a Year! Nobody knew at the beginning of 2020 what a wild ride the whole world would experience but here we are – looking over our shoulder and hoping for better days ahead.
With this being the last newsletter of 2020 it just seemed appropriate to express my deep gratitude to both our vendors and customers for sticking it out this year. Any of us could have been paralyzed with fear with the first covid lockdown and just quit.
Just thinking about some of the stuff that has gone on behind the scenes I thought I’d share a bit. Some of this you will be familiar with, some maybe not. Mid March when everybody expected to die (of course I’m exaggerating, but maybe not much) we made the counter intuitive decision to stay open with some procedural adjustments.
It wasn’t very long afterwards I got wind that the State Farmer’s Market Authority was recommending procedures similar to ours – very interesting considering that they monitor our Facebook pages! About the same time Wendy (Avalon Farms) and I shared the M@D business model and our and safe pickup practices in a Zoom meeting for farmer’s market managers from other Alabama cities. Between the two of us we were able to explain both the technical and practical aspects of M@D that keep everything working. One of those managers actually visited us and got the Friday morning experience!
Thinking about it, to me the technical and procedural aspects everybody was so interested in merely provide a framework for what’s really important – serving each other. Because what makes Market at Dothan special is GOOD PEOPLE. And the longer I open & close the market, print reports, answer emails, write checks and send out newsletters every week, the more I realize that at the end of the day it’s about serving our fellow man. And each of you, in your own way whether as a customer or vendor, do your part as we serve each other. I am SO GRATEFUL. I could have never dreamed of a job that I would love so much, and the reason is getting to work with and be a little part of your lives.
So Merry Christmas and I hope that with all the troubles and trials and sorrows you have endured this year that you find and experience true JOY this beautiful season.

MARKET CHITCHAT & GROWER NOTES
To eliminate any confusion, we are having regular orders and regular pickup on Friday this week so our customers who are not able or do not wish to deal with crowds can order without any disruptions.
Today’s newsletter is the first of the last two ordering cycles for 2020. We will shut down for Christmas Break after Market Pickup on Friday, Dec. 18 and will reopen for orders on January 2, 2021.
Starting January 2021 we are eliminating the Footnotes section of our weekly newsletter. While the information is valuable, it is also on our website, much of it in several places! With the main focus of the newsletter being education and weekly updates we feel that reducing it to a link would better serve everyone.
MAYIM FARMS: Add some spice to that special someones life this season with a basket of homemade goodies…herbal salts, sweet relish, Our Daily Dash spices, cotton dish cloths and pot handles…all hand crafted on Mayim Farm. editors note – Greg and Carrol will be present next Saturday at Open House.
D’S JELLIES: We are so excited to be on site at Dothan Nurseries for Christmas Open House! I will have Mayhaw Jelly, Hot Pepper Jelly, and BlackBerry Jelly. Jellies are unique gifts….delicious, too! I hope to see familiar faces as well as new faces as we celebrate Christmas. Thank you to my customers for another year of support.
AVALON FARMS:
Here we go again with another “let’s try this and see what happens” experiment in our new greenhouse. Tomatoes in containers are covered with row cover, helping them to survive the two hard 6 hour freezes at 26 degrees. They seem to be okay! There’s not really enough daylight hours this time of year for them to produce well. But, hey, they are alive…. Unlike the broccoli plants out in the field. They look bit by the cold months.

KIDS & FOOD
Christmas often brings back sweet classic memories of helping decorate sugar cookies. It’s always a grand time for the kiddos using the rolling pin, picking out which cookie cutter to use, eating bits of dough, licking frosting from sticky fingers, and spilling way too many sprinkles. Even the littlest kid can do something. It’s all joy and fun . . . so much fun that the grownups don’t really mind cleaning up the mess!
Covid for many has upped the ante with parents incorporating their kids, now at home, into everyday kitchen routines and tasks. Some have even taken it to a new level like one father in Florida who has taught his six year old to make pasta . . . from scratch.
This is one of the reasons food blogs for and about children have become increasingly popular. Granted, all are written by adults but all are geared for enhancing healthy mealtimes and making delightful food while making it a delight to create.
You may request a complete list with these and (many) other similar blogs by email to marketatdothan@gmail.com.

A WEEK LIKE TO OTHER
The election is behind us and whether you are mourning or rejoicing over the latest news it does not diminish the fact that LIFE WILL GO ON. Just a little bit ago I saw a satire article about how the red party was demonstrating by going about life as usual.
Those words, “life as usual” . . . they don’t mean what they did a year ago! A year ago we didn’t have to stay 6 feet apart. A year ago walking into a bank wearing a mask would probably get you arrested. Now they won’t let you in without one! A year ago health department mandated quarantine was unheard of but it happens all the time now.
So while “usual” can be debated, it does not decrease the fact that in this election we were all winners before the candidates were announced. It has nothing to do with party affiliations and everything to do with the fact that we were born into an imperfect country that is continually reaching and seeking to be better than we are now. And it has everything to do with the fact that our founding fathers wisely put together a system of checks and balances to make sure we don’t get too crazy in either direction of what that looks like.
To further drive that point home I’m inviting each of you to read this ESSAY written by a relative. Whether you are one of those who rejoice or mourn over how things are going, my hope is that it will provide insight and (if you’re a mourner) encouragement.

OPEN HOUSE UPDATE & MARKET CHITCHAT
Last week we announced that Dothan Nurseries and Market at Dothan would be having Christmas Open House on Saturday, December 5. Since then the date has been changed to DECEMBER 12. The Nursery Open House will be from 9am to 3 pm and our Market vendors plan to be there from 9 am to 1 pm or longer.

.
We are happy to welcome GROWS IN ROWS to our Market Family. Kathy was part of Market at Dothan many years ago and we’re excited that she’s rejoining us with her great local products.
GROWER NOTES
LAURA’S CONFECTIONS: We are now taking Thanksgiving orders for pies and cakes. Please remember to note which items are for the Holiday. Orders will be ready for pickup in Dothan from 3:00 P.M. until 4:00 P.M. Wednesday, November 25th. Thank you for your continued support this year and please have a Happy and Healthy Holiday! VIP – Write “NOV 25 Pickup” in the comment section of your regular Market order to reserve your fresh dessert for pickup on that date.
HORTONS FARM It’s been a busy week here. Our honey was delisted for a few weeks because we quite literally ran out of both containers and honey. That’s all taken care of now as we’ve always done things a bit differently harvesting honey in the fall, and this time around having to rethink packaging with the covid price increases.
In the interest of transparency, the glass jars on the left will be gussied up for the holidays with bulk order discounts available (photos and listings coming soon). The plastic jar to the right is our new 1 lb bottle, sans label.
In unrelated news, our chickens have started molting which means decreased egg production. Its probably coincidence but our young rooster has just discovered his voice as well and seems to be practicing his funny “crow” all all the time. Both are normal chicken life events that we will just take in stride, but we won’t list any eggs this week as it’s too soon to guess how few will be available.
AVALON FARMS:
In a week’s time, the sugar snap peas have gone from just “cracking the soil” to little plants. Amazing!
The girls certainly are enjoying their fresh pasture area. So many new places to scratch up tasty treats! Ooh, there goes a grasshopper! Yummy! (A varied diet makes tasty eggs!!)

Our COVID protocol is still in place for everyone who wants curbside service.
I. Order Payment:
1. Voluntarily prepay by 6 pm Thursday if possible using this PAYPAL link. This eliminates passing paper currency back and forth or handling debit/credit cards on site. Your invoice will be marked PAID and pickup is fast and easy. In the event of undelivered items you will be issued a Market credit that will apply to your next order.
2. Debit/Credit – One of us will briefly step within 6 feet for you to put your card in the chip reader. We do our best to avoid touching your card or you touching the equipment which means we sign an “x” for your signature.
3. Cash and Checks – You may hand them to us. Exact change is preferred if using cash to prevent a lot of passing back and forth. If you choose curbside pickup you are welcome to put payment in your trunk/tailgate as that would eliminate the need to come near your window.
II. Order Delivery:
1. Curb Service: Please pull up next to the Market Shed. We will direct traffic a little bit if needed. Have your trunk/ hatchback open and we’ll load you up!
2. Walk Up Pickup: Please do not come inside. When we see you coming we’ll put your order near the entrance and step back for you to claim it. This system works really well for those of you wishing to get extra veggies that may be available.

We thank you for your interest and support of our efforts to bring you the healthiest, the freshest and the most delicious locally-produced foods possible!

Grower Notes
We’ve lost track of all the questions asking if M@D is doing different events we’ve been involved with in the past. You know the answer, we can’t because of the virus. I have to tell you, my fingers are DELIGHTED to type what follows!
Dothan Nurseries will soon be announcing their annual Christmas Open House. It will not be held on Thursday as has been done in the past but all day on a Saturday. This will allow people more time as they come and go thereby reducing the crowd at any given time and allowing for proper social distancing.
Great plans are underway for live music, giveaways, etc during the day and of course Dothan Nurseries will have some fabulous sales going on as well.
In the short time since the decision was finalized six of our regular M@D vendors have committed to participating and more will be joining us in the weeks to come. We will be working hard to bring you a great variety of food/farm/gift items.
So MARK YOUR CALENDAR and make plans to bless your friends and family with Fresh, Local, Sustainable goods and gift items from right here in the Wiregrass.
PECANS
Here in the deep south we have PECANS. They are so versatile and so delicious. Trees are everywhere, and they are considered a seasonal cash crop. On years when nature does not favor their production prices are high, and in years where they are abundant, like 2020, those who pick them up don’t earn as much.
The trees are oblivious to all of this and continue to do their jobs of giving us one of the most delicious of all nuts. We hope this section inspires you to use them in some different and creative ways.
MARKET CHITCHAT
Holiday Schedule Announcement: We will be closed the week of Thanksgiving. Market will not open on Saturday, Nov. 21 so there will be no order pickup on (Black) Friday, Nov. 27. Regular ordering will resume on Saturday, Nov. 28.
In December we will open for orders on Dec. 5 and Dec. 12, then be closed till January 2, 2021. We are sticking with the normal ordering and pickup schedule during Open House.
GROWER NOTES
AVALON FARMS:
Garden remodeling courtesy of hurricane Zeta. Thankfully I had not planted transplants in that yet! They would probably been ripped up too.
Finally putting a few seeds in the ground. Sugar snap peas are “cracking the ground”, meaning the seeds are sprouting and pushing up on the soil. Going to plant assorted turnips, radishes and greens this weekend. The weather forecast shows lows of 37 Saturday and Sunday night. That should slow down the army worms and give the plants a chance.
Enjoying our first real fall weekend!
